- 2 cups mixed bell peppers (red, yellow, green), chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 2 tbsp olive oil
- 2 cups cooked rice or noodles (optional)
Instructions
- Chop bell peppers and onion into bite-sized pieces; mince garlic and ginger.
- Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook until browned (5-7 minutes).
- Stir in minced garlic and ginger along with onions; sauté until onions are translucent (about 3 minutes).
- Add bell peppers to the skillet; stir-fry until slightly softened but still crunchy (approx. 5 minutes).
- Pour soy sauce over the mixture, stir well, and simmer for an additional couple of minutes.
- Enjoy hot over rice or noodles.
