Ground Turkey and Peppers Stir Fry is a quick and flavorful weeknight dinner that combines lean ground turkey with colorful bell peppers, all enveloped in a savory sauce.


Ingredients

  • 1 lb ground turkey
  • 2 cups mixed bell peppers (red, yellow, green), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 cups cooked rice or noodles (optional)

Instructions

  1. Chop bell peppers and onion into bite-sized pieces; mince garlic and ginger.
  2. Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook until browned (5-7 minutes).
  3. Stir in minced garlic and ginger along with onions; sauté until onions are translucent (about 3 minutes).
  4. Add bell peppers to the skillet; stir-fry until slightly softened but still crunchy (approx. 5 minutes).
  5. Pour soy sauce over the mixture, stir well, and simmer for an additional couple of minutes.
  6. Enjoy hot over rice or noodles.
