  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 3 medium zucchinis (spiralized into noodles)
  • 4 tbsp unsalted butter
  • 2 tsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the zucchini noodles using a spiralizer or julienne peeler; set aside.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden brown and cooked through (5-7 minutes per side). Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Add remaining butter and Italian seasoning; mix well.
  4. Toss in zucchini noodles and cook for about 3-4 minutes until slightly softened but still crunchy.
  5. Return the chicken to the skillet, toss everything together until coated in sauce, and serve hot, topped with Parmesan cheese if desired.
