- 2 cups shredded Monterey Jack and cheddar cheese
- 4 large flour tortillas
- 2 tsp olive oil
- 1 cup sliced bell peppers (any color)
- 1/2 cup sliced sweet onion
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
- Sour cream or salsa for serving
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken with cumin, chili powder, and salt. Cook until golden brown and the internal temperature reaches 165°F (75°C), about 6-7 minutes per side. Remove from skillet and shred.
- In the same skillet, sauté bell peppers and onions until tender and caramelized, about 5 minutes.
- On one tortilla, layer half with cheese, then add shredded chicken and veggies. Top with remaining cheese and fold.
- Cook the quesadilla in the skillet until golden brown on both sides, approximately 4-5 minutes each side.
- Slice into wedges and serve hot with sour cream or salsa.
