- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 12 oz fettuccine or penne pasta
- 4 cups fresh spinach
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the garlic and seasoning the chicken.
- Cook pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
- Heat olive oil in a skillet over medium heat; sauté chicken for 5-7 minutes per side until golden brown. Remove and let rest.
- In the same skillet, add more olive oil if needed and sauté garlic until fragrant. Stir in heavy cream and Parmesan cheese until smooth.
- Add cooked pasta and spinach to the sauce; toss to coat evenly, adding reserved pasta water for desired consistency.
- Slice chicken and place on top of the pasta; garnish with additional Parmesan if desired.
