Ingredients

  • 34 Boneless, Skinless Chicken Breasts
  • 2 Ripe Avocados
  • 1 cup Fresh Spinach or Lettuce
  • 1 cup Cherry Tomatoes (halved)
  • 4 Whole Wheat Tortillas
  • 1/2 cup Greek Yogurt or Mayonnaise
  • 2 tablespoons Lemon Juice
  • Salt and Pepper to taste

Instructions

  1. Preheat your grill or skillet over medium heat. Season chicken with salt and pepper, cooking until golden brown, about 6-7 minutes per side.
  2. Let the chicken rest for 5 minutes before slicing it into thin strips.
  3. In a bowl, mash the avocados with lemon juice until slightly chunky.
  4. Lay a tortilla flat and spread Greek yogurt or mayonnaise down the center. Layer sliced chicken, spinach or lettuce, tomatoes, and mashed avocado on top.
  5. Fold in the sides of the tortilla and roll tightly from the bottom up. Slice diagonally to serve.
