- 3–4 Boneless, Skinless Chicken Breasts
- 2 Ripe Avocados
- 1 cup Fresh Spinach or Lettuce
- 1 cup Cherry Tomatoes (halved)
- 4 Whole Wheat Tortillas
- 1/2 cup Greek Yogurt or Mayonnaise
- 2 tablespoons Lemon Juice
- Salt and Pepper to taste
Instructions
- Preheat your grill or skillet over medium heat. Season chicken with salt and pepper, cooking until golden brown, about 6-7 minutes per side.
- Let the chicken rest for 5 minutes before slicing it into thin strips.
- In a bowl, mash the avocados with lemon juice until slightly chunky.
- Lay a tortilla flat and spread Greek yogurt or mayonnaise down the center. Layer sliced chicken, spinach or lettuce, tomatoes, and mashed avocado on top.
- Fold in the sides of the tortilla and roll tightly from the bottom up. Slice diagonally to serve.
