  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 1 cup dried berries (cranberries, blueberries)
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp chia seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mix rolled oats, mixed nuts, dried berries, coconut flakes, and chia seeds.
  3. In another bowl, whisk together honey (or maple syrup), a pinch of salt, and vanilla extract. Pour this mixture over the dry ingredients and stir until fully combined.
  4. Transfer the mixture into the prepared baking dish and press down firmly.
  5. Bake for 20-25 minutes or until golden brown. Allow to cool completely before slicing.
