Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup green salsa (salsa verde)
  • 2 cans (15 oz each) canned hominy, drained and rinsed
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Optional toppings: sliced radishes, diced avocado

Instructions

  1. Chop the onion and mince the garlic. Sear chicken breasts in a skillet over medium heat until golden brown (about 4 minutes per side).
  2. In your crockpot, combine seared chicken, onion, garlic, green salsa, hominy, and vegetable broth. Stir gently.
  3. Season with salt and pepper; add lime juice.
