Description

  • 2 medium zucchinis (about 400g)
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ cup fresh parsley, chopped
  • ½ cup crumbled feta cheese
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup extra virgin olive oil (for frying)

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large mixing bowl, combine the drained zucchini, flour, eggs, parsley, feta, garlic, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Form the mixture into small patties (about 2 inches in diameter) and fry in hot oil for 3-4 minutes per side until golden brown.
