Easy to prepare, they evoke nostalgia while offering versatility as a main dish or side. Enjoy them hot with applesauce or sour cream for the ultimate flavor experience.

Ingredients

Scale
  • 4 medium starchy potatoes (about 1.5 lbs), peeled
  • 1 small yellow onion, grated
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. Grate the potatoes and onion using a box grater or food processor, then squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, mix the grated potatoes and onion with eggs, flour, salt, and pepper until well combined.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening each slightly to about 1/2 inch thick.
  5. Fry for 4-5 minutes on each side until golden brown. Drain on paper towels before serving.
