  • 4 boneless, skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tsp garlic powder
  • 1 tsp dried Italian herbs (oregano and basil)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Place the chicken breasts between plastic wrap and pound to about 1 inch thick for even cooking.
  3. In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian herbs, salt, and pepper. Drizzle in olive oil while mixing until crumbly.
  4. Coat each chicken breast in the breadcrumb mixture until fully covered.
  5. Place coated chicken on the baking sheet and bake for 25-30 minutes or until golden brown and cooked through (internal temperature of at least 165°F or 74°C).
