Description

Ingredients

  • 2 cups cooked risotto (preferably leftover)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley or basil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine cooked risotto, mozzarella cheese, Parmesan cheese, eggs, and chopped herbs until well mixed.
  3. Scoop about two tablespoons of the mixture into your hands and roll into golf-sized balls. Repeat until all mixture is shaped.
  4. Roll each ball in panko breadcrumbs until fully coated. For extra crunch, double coat by dipping in egg before rolling again in breadcrumbs.
  5. Place arancini on the baking sheet and lightly spray with cooking spray. Bake for 20-25 minutes until golden brown and crispy.
  6. Serve warm with marinara sauce for dipping.
