- 2 cups cooked risotto (preferably leftover)
- 1 cup shredded mozzarella cheese
- 1/2 cup panko breadcrumbs
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley or basil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine cooked risotto, mozzarella cheese, Parmesan cheese, eggs, and chopped herbs until well mixed.
- Scoop about two tablespoons of the mixture into your hands and roll into golf-sized balls. Repeat until all mixture is shaped.
- Roll each ball in panko breadcrumbs until fully coated. For extra crunch, double coat by dipping in egg before rolling again in breadcrumbs.
- Place arancini on the baking sheet and lightly spray with cooking spray. Bake for 20-25 minutes until golden brown and crispy.
