Instructions
- Boil baby potatoes in salted water for 15-20 minutes until fork-tender. Drain and cool slightly.
- Gently smash each potato using a sturdy plate or flat surface until flattened but not completely broken.
- Place smashed potatoes on a parchment-lined tray or directly into the air fryer basket. Drizzle with olive oil and season with garlic powder, salt, pepper, and fresh herbs.
- Preheat the air fryer to 400°F (200°C). Cook the potatoes in batches for 12-15 minutes or until golden brown and crispy.
