  • 4 boneless, skinless chicken breasts
  • 12 oz fettuccine pasta
  • 1 cup oil-packed sundried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil and sear chicken breasts for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  3. Remove chicken from the skillet, then add minced garlic and sundried tomatoes to the same skillet. Sauté until fragrant (about 1 minute).
  4. Pour in heavy cream and scrape any browned bits from the pan. Stir in Italian seasoning and simmer for 3-4 minutes until slightly thickened.
  5. Add fresh spinach and Parmesan cheese to the sauce; stir until the spinach wilts and cheese melts.
  6. Slice the chicken and return it to the skillet along with drained pasta. Toss gently to combine; season with salt and pepper before serving.
