  • 8 oz smoked Gouda cheese, shredded
  • 2 large Yukon Gold potatoes, diced (about 4 cups)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and fresh thyme; cook for an additional minute until fragrant.
  3. Stir in diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Use an immersion blender to purée the soup until smooth. If using a regular blender, let it cool slightly before blending in batches.
  5. Return the pot to low heat and stir in heavy cream and shredded smoked Gouda until melted and fully incorporated.
