  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup frozen peas
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup dry white wine
  • 4 cups chicken broth, warmed
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. In a large skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and cook until fragrant (about 30 seconds).
  2. Add the Arborio rice, stirring to coat each grain in the oil. Toast for about 1 minute until slightly translucent.
  3. Pour in the white wine and let it simmer while scraping any bits from the pan. Cook until mostly evaporated (2-3 minutes).
  4. Lower heat to medium-low, adding warm chicken broth one ladle at a time, stirring continuously until absorbed (18-20 minutes total).
  5. When the rice is al dente, stir in the shrimp and frozen peas. Cook until shrimp turn pink (3-5 minutes).
  6. Remove from heat, stir in Parmesan cheese and butter, seasoning with salt and pepper to taste before serving hot.
