- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice (Basmati or Jasmine)
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 3 cloves fresh garlic, minced
- 2 cups fresh spinach or kale
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the garlic and measuring the rice.
- In a large pot over medium heat, add olive oil. Sear the seasoned chicken breasts for about 5 minutes on each side until golden brown. Remove from the pot and set aside.
