  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice (Basmati or Jasmine)
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves fresh garlic, minced
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the garlic and measuring the rice.
  2. In a large pot over medium heat, add olive oil. Sear the seasoned chicken breasts for about 5 minutes on each side until golden brown. Remove from the pot and set aside.
  3. In the same pot, sauté minced garlic for one minute until fragrant.
  4. Add rice to the pot, stirring to coat with garlic oil. Pour in chicken broth and bring to a simmer.
  5. Return the chicken to the pot along with any collected juices. Cover tightly and reduce heat to low for 15-20 minutes until rice is tender.
  6. Stir in heavy cream and Parmesan cheese until combined and creamy.
  7. Serve warm, topped with additional cheese if desired.
