- 4 boneless skinless chicken breasts (680g)
- 8 oz (225g) penne pasta
- 4 cloves fresh garlic, minced
- 8 oz (225g) cremini or button mushrooms, sliced
- 1 cup (150g) fresh asparagus, trimmed and cut into pieces
- 1 cup (240ml) heavy cream
- 1 cup (100g) freshly grated Parmesan cheese
- 2 tbsp (30ml) olive oil
- Salt and pepper, to taste
- 1 tsp Italian seasoning
Instructions
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and slice.
- In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 5 minutes until tender. Add asparagus and cook for another 2 minutes.
- Pour in heavy cream and stir gently as it thickens. Mix in Parmesan cheese until melted.
- Return sliced chicken to the skillet along with drained penne pasta. Toss everything together until well coated with sauce.
- Serve hot, garnished with extra Parmesan cheese.
