Description

Creamy Mushroom and Asparagus Chicken Penne is a comforting dish featuring tender chicken, fresh asparagus, and earthy mushrooms in a rich cream sauce over al dente penne. Perfect for family meals!


Ingredients

  • 4 boneless skinless chicken breasts (680g)
  • 8 oz (225g) penne pasta
  • 4 cloves fresh garlic, minced
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1 cup (150g) fresh asparagus, trimmed and cut into pieces
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) freshly grated Parmesan cheese
  • 2 tbsp (30ml) olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and slice.
  3. In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 5 minutes until tender. Add asparagus and cook for another 2 minutes.
  4. Pour in heavy cream and stir gently as it thickens. Mix in Parmesan cheese until melted.
  5. Return sliced chicken to the skillet along with drained penne pasta. Toss everything together until well coated with sauce.
  6. Serve hot, garnished with extra Parmesan cheese.
