  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 (15 oz) can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Tortilla strips for topping
  • Fresh cilantro for garnish

Instructions

  1. Cook the chicken in a large pot over medium heat, seasoned with salt and pepper. Cook until no longer pink (6-8 minutes per side). Remove from pot and shred.
  2. In the same pot, sauté diced onions and bell peppers until softened (about 5 minutes).
  3. Add minced garlic and cook for another minute before stirring in the diced tomatoes.
  4. Pour in the chicken broth and bring to a gentle simmer for about 10 minutes.
  5. Lower heat and add softened cream cheese; stir until melted and combined.
  6. Return shredded chicken to the pot along with shredded cheese until melted. Serve hot topped with tortilla strips and cilantro.
