  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients by chopping garlic and basil.
  2. Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper, cooking for 6-7 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
  4. In the same skillet, sauté minced garlic for one minute until fragrant. Pour in chicken broth followed by cream; bring to a gentle simmer.
  5. Stir in cooked penne pasta and diced chicken, mixing until evenly coated with sauce. Add grated Parmesan cheese and stir until melted.
  6. Remove from heat and mix in chopped basil before serving hot.
