  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 16 oz gnocchi (store-bought or homemade)
  • 2 cups fresh spinach (or kale)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces. Chop garlic, carrots, and celery.
  2. In a large pot over medium heat, add olive oil and sauté chopped carrots and celery for about 5 minutes until softened. Stir in minced garlic for an additional minute.
