- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30-35 minutes until tender.
- Meanwhile, cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, brown sausage slices for about 5-7 minutes until crispy. Remove from skillet and set aside.
- In a blender, combine roasted butternut squash, garlic, vegetable broth, and heavy cream. Blend until smooth.
- Return the blended sauce to the skillet over medium heat. Stir in cooked pasta and sausage until well coated.
