  • 2 cups butternut squash, peeled and cubed
  • 8 oz fettuccine or penne pasta
  • 1 lb Italian sausage (sweet or spicy)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30-35 minutes until tender.
  2. Meanwhile, cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, brown sausage slices for about 5-7 minutes until crispy. Remove from skillet and set aside.
  4. In a blender, combine roasted butternut squash, garlic, vegetable broth, and heavy cream. Blend until smooth.
  5. Return the blended sauce to the skillet over medium heat. Stir in cooked pasta and sausage until well coated.
  6. Serve topped with freshly grated Parmesan cheese.
