  • 2 medium Russet potatoes, peeled and diced (about 2 cups)
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or milk
  • Salt and pepper to taste

Instructions
