  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 tsp smoked paprika
  • 4 cups low-sodium vegetable broth
  • 1 cup fresh basil leaves (for garnish)
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until translucent (about 5 minutes).
  2. Pour in the canned tomatoes along with their juice. Stir in smoked paprika, salt, and pepper; simmer for 10 minutes.
  3. Add vegetable broth and white beans; bring to a gentle boil. Reduce heat to low and simmer uncovered for 15-20 minutes.
  4. For a creamier texture, blend the soup using an immersion blender until smooth or carefully transfer batches to a blender.
