Cottage Cheese Egg Bites are a quick, nutritious snack that blends creamy cottage cheese with fluffy eggs and vibrant veggies for a deliciously satisfying bite.

  • 1 cup cottage cheese (low-fat or full-fat)
  • 4 large eggs
  • 1 cup fresh baby spinach, chopped
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup bell peppers, diced
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the cottage cheese and eggs until smooth. Season with salt and pepper.
  3. Stir in spinach, bell peppers, and cheddar cheese until evenly mixed.
  4. Pour the mixture into muffin tins, filling each cup about three-quarters full.
  5. Bake for 18-20 minutes or until golden brown on top.
