  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 6 cups low-sodium chicken broth
  • 1/4 cup fresh dill, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 2 medium carrots, sliced thinly
  • 2 celery stalks, diced
  • 1/2 tsp black pepper, freshly cracked
  • 2 tbsp olive oil
  • 2 bay leaves

Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic, onions (if using), carrots, and celery; sauté for about 5 minutes until softened.
