Description

Chipotle Honey Salmon Tacos with Pineapple Salsa are a perfect blend of sweet and spicy, wrapped in warm tortillas and topped with refreshing salsa for a delightful meal.


Ingredients

  • 1 lb fresh salmon fillets
  • 2 tbsp honey
  • 2 tsp chipotle powder
  • Juice of 2 limes
  • 8 small corn or flour tortillas
  • 1 cup fresh pineapple chunks
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 jalapeño pepper, minced (deseeded for less spice)
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together honey, lime juice, chipotle powder, salt, and pepper.
  2. Place salmon fillets in a shallow dish and pour marinade over them; marinate for at least 30 minutes.
  3. Preheat grill or oven to 400°F (200°C). Grill salmon for 4-5 minutes per side or bake for 12-15 minutes until flaky.
  4. For the salsa, combine pineapple, red onion, cilantro, jalapeño, lime juice, salt, and pepper in a bowl; mix gently.
  5. Warm tortillas briefly on the grill or stovetop. Flake salmon into pieces and place on tortillas; top with pineapple salsa.
