- 1 lb fresh salmon fillets
- 2 tbsp honey
- 2 tsp chipotle powder
- Juice of 2 limes
- 8 small corn or flour tortillas
- 1 cup fresh pineapple chunks
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro (optional)
- 1 jalapeño pepper, minced (deseeded for less spice)
- Salt and pepper to taste
Instructions
- In a bowl, whisk together honey, lime juice, chipotle powder, salt, and pepper.
- Place salmon fillets in a shallow dish and pour marinade over them; marinate for at least 30 minutes.
- Preheat grill or oven to 400°F (200°C). Grill salmon for 4-5 minutes per side or bake for 12-15 minutes until flaky.
- For the salsa, combine pineapple, red onion, cilantro, jalapeño, lime juice, salt, and pepper in a bowl; mix gently.
- Warm tortillas briefly on the grill or stovetop. Flake salmon into pieces and place on tortillas; top with pineapple salsa.
