- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh greens (romaine or baby spinach)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, thinly sliced
- 1/2 cup Greek yogurt
- 1 tbsp Dijon mustard
- 2 whole wheat tortillas
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your grill or pan over medium heat. Season the chicken with salt and pepper, then grill for 6-7 minutes on each side until fully cooked.
- Let the chicken rest for a few minutes before shredding it into bite-sized pieces.
- In a bowl, combine Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth.
- Lay out the whole wheat tortilla and layer with fresh greens, shredded chicken, cherry tomatoes, and cucumber slices.
- Fold in the sides of the tortilla and roll tightly from one end to another.
- Slice in half diagonally and serve immediately with extra dressing if desired.
