Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh greens (romaine or baby spinach)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 1/2 cup Greek yogurt
  • 1 tbsp Dijon mustard
  • 2 whole wheat tortillas
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or pan over medium heat. Season the chicken with salt and pepper, then grill for 6-7 minutes on each side until fully cooked.
  2. Let the chicken rest for a few minutes before shredding it into bite-sized pieces.
  3. In a bowl, combine Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Whisk until smooth.
  4. Lay out the whole wheat tortilla and layer with fresh greens, shredded chicken, cherry tomatoes, and cucumber slices.
  5. Fold in the sides of the tortilla and roll tightly from one end to another.
  6. Slice in half diagonally and serve immediately with extra dressing if desired.
