Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 large egg yolk
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 2 cups assorted fresh berries (strawberries, blueberries, raspberries)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and blend until dough forms.
  2. Press dough into a tart pan evenly across the bottom and sides. Prick with a fork to prevent bubbling and bake for about 20 minutes or until golden brown. Let cool.
  3. In another bowl, whisk cream cheese until smooth. Add powdered sugar and vanilla extract; mix well.
  4. Spread the cream cheese mixture over the cooled crust evenly.
  5. Arrange fresh berries on top in a colorful pattern.
  6. Refrigerate for at least one hour before serving. Dust with powdered sugar just before serving.
