  • 4 salmon fillets (6 oz each)
  • 2 ripe peaches, sliced
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, whisk together bourbon, brown sugar, soy sauce, lemon juice, minced garlic, olive oil, and honey until smooth.
  3. Marinate the salmon fillets in half of the marinade for 20-30 minutes.
  4. Toss peach slices with the remaining marinade.
  5. Arrange marinated salmon in the baking dish and scatter peach slices around them.
  6. Roast for 15-20 minutes until the salmon flakes easily with a fork.
