- 6 large hard-boiled eggs
- 1/4 cup mayonnaise
- 2 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper

- 2 black olives (for eyes)

Instructions
- Boil the eggs in a pot covered with cold water for 10-12 minutes. Transfer to an ice bath to cool.
- Once cooled, peel the eggs and slice them in half lengthwise. Scoop out the yolks into a bowl.
- Mash yolks with mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth.
- Pipe the filling back into the egg whites generously.
- Slice olives into rounds for eyes and place on top of each egg chick; garnish with chives.
