  • 2 salmon fillets (about 6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine rice
  • 1 cup broccoli florets
  • 1 medium carrot (thinly sliced)
  • 1 tbsp toasted sesame seeds
  • 2 green onions (chopped)
  • 2 tbsp honey
  • 2 garlic cloves (minced)
  • 1 tsp fresh ginger (grated)

Instructions

  1. In a saucepan over medium heat, combine soy sauce, honey, minced garlic, and grated ginger. Stir until mixed and bring to a simmer.
  2. Rinse jasmine rice under cold water until clear. Cook according to package instructions (approximately 15-20 minutes) until fluffy.
  3. Heat a non-stick skillet over medium-high heat. Cook salmon fillets skin-side down for about 4-5 minutes until crispy. Flip gently, adding teriyaki sauce while cooking for additional flavor.
  4. In another pan with oil, sauté broccoli florets and sliced carrots for about 4-6 minutes until tender-crisp.
  5. Layer cooked rice in meal prep containers or bowls, top with salmon, and arrange sautéed vegetables around it. Drizzle with extra teriyaki sauce.
  6. Sprinkle toasted sesame seeds and chopped green onions over each bowl before serving.
